http://ceph.com/docs/master/cluster-ops/add-or-rm-mons/ says this a few ways:
You must have an odd number of monitors in your cluster to establish a quorum.
A quorum can be formed whenever a majority of the monitors in a cluster can reach each other.
The recommendation to run an odd number is simply that running an even number provides less fault tolerance - with 5 monitors, you can tolerate 2 failures and still have a majority. With 6 monitors, you can still only tolerate 2 failures, since 3/6 is not a majority, but you have a higher change of having two failures with 6 monitors than with 5.
