We document that, to use a different image from the default for a monitoring stack daemon, you must change the image config option.

For example, for prometheus you must run 'ceph config set mgr mgr/cephadm/container_image_prometheus . . . '

However, after this is set the user's monitoring stack daemons will still be using the new image until the daemon is actually redeployed.
We should document the need to redeploy for the change to take effect.
